The Celtic Bayou Pub and the Far West Ireland Brewing Company officially opened on August 20, 2001. Its founders—Mick McWilliams, Rob Bowman, and Peter Delaney—share a common love of quality handcrafted beer and fine pubs. They also share an appreciation for history and pride in their Celtic heritage, having Irish, Scottish and Welsh ancestries…and a strong taste for the unconventional. To that end, we get a lot of questions about how we came up with our unique combination of Cajun Food and Irish Mood. Here’s our story….

Our principal partner, Mick McWilliams, spent several of his early years in Germany, where he fell in love with fine German beers. While attending college later in the Southeastern U.S., he acquired a love of Cajun food. Of course, we never forget our first loves, so years later when Mick was living in St. Louis, one of his favorite pursuits was dining out on Cajun food, followed by a night on the town at a fine Irish pub for some good beer and Irish music. One night, while relaxing after work over a microbrew, he started a lively discussion with some pals about “what I really want to do in life.” From those reflections in a pint glass, the dream of the Celtic Bayou was born.

Mick, Rob, and Peter wanted to offer patrons of the Celtic Bayou a unique and memorable dining and drinking experience. That was, and remains, the foundation of our business philosophy. Our food and beverages are of the highest quality possible, as is our service and atmosphere. We feature a unique sampling of original Cajun dishes along with a dappling of Irish and American appetizers, entrees, and desserts, all masterfully prepared by our kitchen. As always, we emphasize the Celtic and the Cajun, the two themes that define Celtic Bayou ambiance and appeal.

Our state of the art Brewery produces a grand variety of traditional styles and seasonal beers, all served with the pride and spirit of the Craft Brew industry. Our Head Brewer, Tom Munoz, uses the best ingredients and believes, like we do, that the best beer is served fresh: No mass market beverages here. Customers especially enjoy our flagship Connaught Ranger IPA and our many other regular styles. They also appreciate our variety of rotating “Guest Taps” of popular local beers.

The Pub boasts a cozy fireplace, a stage area, outdoor covered seating and beer garden, a steel-tip dartboard, and a state-of-the-art entertainment system. We also have the latest in video, audio, and wireless data communications. We don’t offer such distractions as pool tables, pull-tabs, juke boxes, and electronic games, and perhaps most importantly, we are a nonsmoking establishment.
